Green Cavendish banana are a carbohydrate- rich food (>85% calculated on dry weight); providing various vitamins and minerals, and containing a resistant starch content of approximately 30-55% (according to a study published in the Food Bioscience journal, 2022). In green cavendish banana, resistant starch primarily belongs to the RS2 type. This is a form of starch with a semi-crystalline granular structure, a high degree of crystallinity, and a relatively high amylose content, creating a stable structure that makes it difficult for digestive enzymes like α-amylase to access and break down (Munir et al., 2024). Upon entering the body, RS2 is not digested in the small intestine but is fermented in the colon by the gut microbiota, producing short-chain fatty acids (SCFAs) such as butyrate, propionate, and acetate. These substances play an important role in nourishing intestinal epithelial cells and are beneficial for the digestive system.

- Step 1: Cook noodles in boiling water for 3-5 minutes until just tender. Drain and rinse with clean water, then set aside to drain completely.

- Step 2: Serve in a bowl with your choice of roth (chicken, beef, pork, or crab) Alternatively, stir-fry or mix with vegetables, meat, and your preferred seasonings.
